Recipe of the Week:Fabulous Feta Topped Chicken Meal in Under 30 Minutes!

Being a college student, it can be hard to make a decent meal that doesn't take hours to prepare. Not to mention, most recipes are designed to be enjoyed by four people so finding something you can make and not have left overs from for a week is a challenge to say the least.

Feta Chicken is super easy to make and tastes amazing. Pair with Rice-A-Roni Wild Rice and Green Giant Steam in a Bag Broccoli with Cheese and you have a quick, nutritious and delicious meal that takes under thirty minutes to prepare.

What you will need:
1 lemon
1 boneless skinless chicken breast
1/2 cup bread crumbs
1/4 cup feta cheese
4 tsp olive oil
1 box Rice-A-Roni Wild Rice
1 bag Green Giant Steam in a Bag Broccoli and Cheese

What to do:
Start cooking the Rice-A-Roni by following the instructions on the box. A time saving trick, you do not have to brown the rice before you begin cooking, you can just combine all the ingredients into one pan and stir. It still tastes good that way. The rice takes about twenty minutes to cook and needs to be stirred frequently.

Combine feta cheese and 2 tsp of olive oil in a small bowl. Add 1 tsp of lemon peel and 2 tbsp of lemon juice. You can get both the lemon peel and the lemon juice from one lemon. Stir everything together with a fork and set aside.

Next set a small frying pan on the stove to medium heat with 2 tsp of olive oil inside. Put breadcrumbs in a small bowl. Take the chicken breast and rinse it with water to be sure it is clean. Place the chicken breast in the bread crumb bowl and be sure to cover both sides with the bread crumbs. Put the bread crumb covered chicken breast into the frying pan and let it cook until it is golden brown, flipping occasionally to cook both sides.

Once the chicken looks close to being done place the Green Giant Steam in a Bag Broccoli and Cheese in the microwave for five minutes. When it is done let it cool for one minute before transferring to a bowl.

Once the chicken is fully cooked, you will want to cut it in half and be sure it is not pink in the middle. Place the chicken on a plate and put some of the feta mixture you prepared before on top. Enjoy!
